POTATO LATKES (Serves 6-8)
INGREDIENTS
- 1 kg peeled, finely grated potatoes
- 250g grated onion
- 150g matzo meal or flour
- 4 large eggs
- 2tsps caraway seed (optional)
- Salt and pepper
- Oil for Frying
RECIPE
Wash the grated potatoes in a few changes of clean, cold water.
Mix with the rest of the ingredients.
Add salt and pepper.
Heat the oil in a large frying pan.
Drop a spoonful of the mixture into the hot oil.
Flatten each spoonful with a metal spatula into an unevenly round, flat pancake.
Fry on medium heat for 3 – 4 minutes on each side, or until each pancake is a pale, golden brown.
Drain well on absorbent paper and serve very hot.
PRESENTATION
Place the Latkes on a platter and serve with apple sauce & sour cream.
